Led by chefs Brianna Smith and Oliver Edwards, the restaurant combines a deep respect for small-scale producers with a DIY philosophy rarely seen in the city.
The kitchen make their own charcuterie, bake their own sourdough bread, make fresh-curd cheeses, and prepare vinegars, ferments, meads and pickles using the season's best ingredients.
Dishes feature these house-made ingredients alongside wood-grilled meat and fish from some of Victoria's best suppliers. Signatures include a Bundarra Berkshires pork chop to share, wood-fired mushrooms with daikon, and a spelt vanilla slice.
Situated in the historic Richard Allen building on Flinders Lane, the two-storey space features soaring ceilings, unique light fixtures, luxurious gold touches and large windows looking onto the neighbouring heritage buildings.
